BUTTER IN FIVE MINUTES.

THE attention of the Public is respectfully solicited to an examination of the
merits of the above invention.
One of its recommendations is its great simplicity — it operates on a beautiful
principle. The mechanical action of the air, -which is mingled with the Cream in
such a manner that a thorough separation of the particles takes place, preventing
the Cream from frothing on the surface, and doing its work with most astonishing
rapidity, and in the most efficient manner.
Butter is produced from Cream within 12 minutes, and with greater facility from
Milk ; and so perfect is the operation, that more Butter, and of better quality,' is
obtained from the same quantity of Cream, than by any other method ever yet tried.
The Butter may be washed in the Churn, by pouring off the Milk, putting in cold
water, and pressing the Butter against the sides of the Churn, moving the dasher
backwards and forwards, and changing the water until it remains clean.

Extract from a Glasgow paper, May 17, 1850 : —
" New Churn. — Butter in Five Minutes. — Yesterday, an exhibition of con-
siderable interest and importance took place in the Sale-room of the Royal Exchange.
A churn, recently invented by a Mr. Anthony of Pittsburg, United States, was sub-
mitted to the inspection of the public by Mr. Mitchell, of Kay and Mitchell, Newgate
Street, London, the agents of the patentee in this country. By this new process,
the inventor professes to be able to manufacture butter in about twelve minutes, and,
on trial yesterday, this result was much more thau realised, for, in precisely three
and a half minutes after the churn had been put in motion, the cream was found to
be what, in the language of the dairy, is called " broken ;" and, in one minnte more,
some beautiful butter was produced of the usual consistency. Several of the numerous
parties present tasted it, and pronounced the quality to be excellent, and altogether
much satisfaction was expressed at the successful issue of the experiment."

" We have just witnessed an experimental trial of Anthony's Double-
Acting Patent Churn, exhibited this day at the Buteshire Agricultural Society's
Cattle Show, by R. Gray & Sons, Agricultural Implement Makers, Uddingston, and
have much pleasure in certifying, that butter of excellent quality was produced in
four and a half minutes after the churn was set in motion ; its simplicity and
efficiency of action is admirable, and consider it the greatest improvement in dairy
management that has yet fell under our notice.
