^F'HIS carefully pre^Dared VINEGAR is much esteemed as a table relish. With Hash, Cold
JL Meat, and with Fish, it is geuovally preferred to the more expensive Sauces in use, on
account of its hghtness, delicacy of flavour, and efficiency as an aid to digestion. It forms
a piquant flavouring for Soups, Gravies, etc., and is suitable for all purposes for which
common vinegar is used. It requires 110 preparation or additional spices for
pickling.
In reviewing an article on Salads in Blackwood's Magazine, and Lady Harriet St. Clair's
' Dainty Dishes,' tlie Daily Bevieiv of October 8, 1866, makes the following allusion to
CAMPBELL'S INDIAN VINEGAR :—
' There is another ingredient, too, which both the writer before us and Lady Harriet St.
Clair should remember. Blackwood gives his readers a clioice between common vinegar and
tarragon ; and Lady Harriet has several descriptions of vinegar, the preparation of Avhich
alone would be found a serious obstacle. All these preparations have been rendered
unnecessary by the vinegar invented and prepared by Jlr. Campbell, " CAMPBELL'S
INDIAN SPICED VINEGAR," which is at once as aromatic as tarragon, and not merely as
economical, but as handy to use as the common vinegar, and more generally applicable than
either — the poor man's sauce and the rich mail's luxury.^
