AMERICAN DOUGH NUTS.
1 lb. flour. 1 teaspoonful baking powder.
1 oz. butter. pinch of salt.
1 tab'espoonful sugar. enough milk to make a, paste.
Rub butter into flour, add other ingredients. Moisten with
milk. Drop in spoonfuls into hot fat and fry.—S. Oliver.
ORANGE CAKE.
3 ozs. sugar.
3 eggs.
teaspoonful baking powder.
3 ozs. butter.

lb. flour.
grated rind of an orange.
Cream the butter and sugar and add the well-beaten eggs when,
thoroughly mixed. Sift in flour and baking powder. Add orange
rind. Beat well, pour into a greased tin, and bake in a steady
oven .=hiss Eddie, Forest Lodge, Sydney, Australia.
DUNDEE BISCUITS.

lb. flour. 2 ozs. rice flour.
lb. butter. 4 ozs. castor sugar.
Warm the butter without letting it get oily, and when it is quite
soft add the other ingredients, kneading the mixture until it is a
soft paste. Then turn it on a floured board and roll to the thick-
ness of half-an-inch. Cut into small pieces, oblong in shape, and
place them on greased tins. Rough, them with a fork, and bake
in a moderate oven to
,
a golden brown. This makes a very pretty
biscuit indeed. If you are in a hurry, just stamp the mixture out
