19th century salad recipe

Around 1878, Mary Malcolm Palmer-Douglas from Burnfoot House, near Langholm, copied this 'receipt' from the highly influential women's magazine 'The Queen'.

The lettuce was drenched with a dressing of French mustard, egg yolks, vinegar and herbs garnished with hard boiled eggs and olives.
